Usually, freshly baked kefir pancakes are great to eat without any filling, just grease them with butter. But if you want to make the dish more filling and interesting, pair the pancakes with sweet or savory additions.

Pancakes with kefir - general principles of preparation

Many people prefer to cook pancakes with kefir rather than with milk, because such pancakes turn out airy, delicate and very tasty.

The dough for pancakes with kefir should not be as liquid as for pancakes with milk. But to make the pancakes thin, you can add no a large number of boiled water or even mineral water. You can also make custard pancakes with kefir - for this you should brew the flour with boiling water.

Soda is often added to kefir pancake dough. Soda reacts with the acid contained in kefir - as a result, carbon dioxide is released. Thanks to this, the pancakes are especially porous and airy. For 1 liter of kefir you need to take one or two teaspoons of soda. The main thing is not to overdo it, otherwise the pancakes will taste like soda. The amount of soda depends on the desired thickness and structure of the pancakes. Pancakes are fried like kefir, usually in vegetable oil.

The technique for making pancakes with kefir is not much different from baking pancakes according to other recipes. Ready dough pour a ladle or ladle into a frying pan heated with oil and bake on both sides until golden brown. The edges should be moderately dry and well toasted.

There is no need to pour too much batter - the pancakes should be thin and of the same thickness. To evenly distribute the dough on the surface of the pan, you need to make rotational movements when pouring. The pan is always held at a slight angle.

You can flip the pancake with a special spatula or a long knife. In extreme cases, you can use a fork. Experienced chefs they flip pancakes without any additional equipment - they simply throw the pancake up, where it turns over in the air.

Hot kefir pancakes are served with honey, jam, condensed milk, whipped cream or sour cream. Kefir pancakes go well with salty and sweet fillings. Cooled kefir pancakes stick strongly to each other, so the entire stack can be heated in the microwave. After this, the pancakes will again lag well behind each other.

Pancakes with kefir - preparing food and utensils

Before you start making pancakes with kefir, you need to measure out the required amount of flour, sugar, salt and soda. Be sure to sift the flour - this helps saturate the dough with oxygen and makes the pancakes more fluffy and airy.

You also need to melt the butter and warm the kefir a little. If the recipe uses plain water, it must be boiled. The eggs should be at room temperature, so remove them from the refrigerator in advance.

For cookware, you will need a cast iron frying pan or a frying pan with a non-stick or Teflon coating. You can also use a special frying pan for baking pancakes; you do not need to grease it with oil. You also need to prepare a clean enamel bowl for the dough, a whisk, a glass for determining the amount of ingredients, a spatula, a ladle or ladle and a brush for greasing the pan. Place the finished pancakes on a wide flat dish greased with butter.

I remember in the past, it took me a long time to learn how to properly bake pancakes. For some reason, they came out thick and it was difficult to properly wrap the filling in them. And all this happened until I came across best recipes of this kefir baked goods - thin, and also with holes, simply amazing.

And the most interesting thing is that everyone can use them, following all the recommendations (when I advertised them among my friends, I only heard good feedback), even for novice cooks who just started cooking for the first time, there are no first lumps, the dough does not stick to the pan, and the big plus is that thin ones are very good for stuffing compared to thick ones.

In today's episode we will talk about. If necessary, pick up a pen and notepad, and then write down your favorite recipe, which you will prepare in the future for yourself and your household.

Turn it over and do the same on the other side.

The pancakes turn out thin and have a round hole.
