When soda and vinegar are combined, carbon dioxide is released, which “loosens” the structure of the dough, that is, makes it more fluffy.

Beat the egg a little and add it to the dough.

Knead the dough with your hands, but without fanaticism. We won’t knead for long, otherwise the oil will heat up from our hands and ruin the entire structure. 5 minutes of kneading is enough.

Form the dough into a ball, wrap it in film and place it in the refrigerator for 20 minutes.

In the meantime, let's prepare the filling for our delicacy. The butter here may be slightly softened, cut it into pieces, mix with flour and sugar. Knead with your hands until crumbs form.

Take the dough out of the refrigerator and roll it out into a thin layer, and pour the crumbs of cottage cheese and flour on top. If desired, you can add nuts or poppy seeds, for example.

Roll the dough into a roll and cut into portions.

All that remains is to place the cookies on a baking sheet lined with parchment and brush the top with egg. If desired, you can sprinkle with nuts or poppy seeds.

After grating some butter, mix it with flour and knead it with your hands. Then grate again and combine with flour again. The dough comes out in the form of crumbs.

Now the cottage cheese needs to be crushed using a blender to a homogeneous soft mass.

Combine flour and cottage cheese and knead the dough with your hands. Moreover, this needs to be done quite quickly, until the butter begins to melt. The dough turns out crumbly, not perfectly homogeneous and quite sticky.

Wrap the dough in cling film and place in the refrigerator for 1 hour. After this it becomes more elastic.

Roll it out into a thin layer on a table sprinkled with flour. Using a glass, cut out circles.

Cut only a small piece of dough, which you will immediately roll out, and it is better to keep the rest in the refrigerator for now.

Now dip one side of each circle into sugar, fold it in half and dip one side into sugar again. And dipping it again, we get a triangle.

We do this with all the dough. By the way, if you think there are enough cookies, you can store the remaining dough in the freezer and defrost it if necessary.

  • flour - 1 cup

First, mix flour and baking powder.

Preheat the oil at room temperature so that it becomes soft. You can cut it into pieces, so it will be easier to knead. Combine butter, cottage cheese and egg, add sugar, vanilla sugar, salt and cinnamon.

Grate the zest of 1 large or 2 medium oranges and the zest of a lemon. Also add to the dough and knead.

Pour the flour according to the recipe onto the table and mix it into the butter and curd mass. The dough should not be tight and not stick to your hands.
