The dough can be kneaded using any fermented milk product that is available, and it is guaranteed to turn out successful, even if this is the first time you have picked up a rolling pin. We also select the filling at our discretion: any type of cheese + herbs to taste - simple, but incredibly tasty and aromatic. The flatbreads turn out simply wonderful! Soft, fluffy, with a deliciously crispy crust and a delicately chewy filling. It's impossible to resist!

Dough ingredients:

  • kefir (sour milk, yogurt) – 250 ml,
  • egg – 1 pc.,
  • vegetable oil – 30 ml,
  • sugar – 1 tsp,
  • salt – 0.5 tsp,
  • soda – 0.5 tsp. or 1 tsp. baking powder,
  • flour – 400-450 g.
  • For filling:
  • cheese (any kind, I have suluguni) – 350 g,
  • greens – 50 g,
  • salt - to taste.
  • + butter – a piece for greasing the finished flatbreads.

How to cook flatbreads with cheese in a frying pan

Heat kefir until approx. room temperature(I put it straight from the refrigerator into a micro for 10-12 seconds). Pour the kefir into a bowl and beat in the egg. The fat content of kefir does not matter; this dough always turns out successful - soft, fluffy, pleasant to work with. Dough mixed with yogurt or sour milk.


Salt everything, add sugar. Pour in vegetable oil and whisk the mixture until smooth.

Now add soda to the dough. Mix the mixture again with a whisk, watching it bubble. If you decide to use baking powder instead of soda, then skip this step and add the baking powder, sifting it into a bowl along with the flour.

Gradually sift the flour into the dough, mixing it in first with a whisk, and then transferring it to the work surface and bringing it to the desired state.

The dough is easy to knead and comes out very soft and pliable. It doesn't stick to your hands. When using kefir with 2.5% fat content, I needed 400 g of flour for kneading. If you knead the dough with sour milk or yogurt, you will need more flour. Lightly dust the formed dough ball with flour and hide it under film for 20 minutes.


This time can be spent preparing the filling. Grate the cheese on a coarse grater. The choice of cheese is also at your discretion. I often take suluguni, sometimes I dilute it with cottage cheese or semi-solid “Russian/Dutch”.


Rinse the greens, dry them, chop them finely and add them to the grated cheese. Stir the filling, taste it and, if necessary, add more salt to taste. Ready.

We slightly knead the rested dough (it has become even softer and more pleasant), divide it into small koloboks - we determine the size depending on the desired thickness of the flatbreads and the diameter of the frying pan. I got 7 koloboks.


Roll out the bun into a flat cake about 3 mm thick. Place the filling in the middle - a ball, approximately the same size as the dough ball.

We hide the cheese filling in the dough, gathering the edges of the flatbread in the center above the filling.

Gently press the flatbread with your hands - this will make it easier to roll it out. If the dough is a little sticky, sprinkle the work surface with flour. But, again, only a little, otherwise the flour will burn when frying.


And roll them out to the required size, keeping in mind that they will still rise during frying. I made the cakes quite thin - 4-5 mm.

The cakes form quickly, so you can set the pan to warm up as soon as you start modeling. Place the formed flatbread seam side down and fry in a frying pan without oil with the lid closed. When flipped brown side up, the tortilla may swell. In this case, you can carefully pierce it to release the air.


Grease the finished flatbreads with butter.

And serve right away - hot, when the cheese in the filling is still stretchy, they are especially tasty.

Sometimes you want to cook something quick and tasty, and also from a minimal set of available products. Quick cheese flatbreads in a frying pan are just such an option. The recipe is very simple, they are incredibly easy to prepare, and the result will pleasantly surprise you.

These thin cheese cakes turn out very soft and tender - the main thing is not to stuff the dough with excess flour. You can use absolutely any hard or semi-hard cheese. Do not pour a lot of oil into the pan during frying so that the cakes are not greasy. It is better, if desired, to grease the prepared ones with butter.

  • kefir - 200 ml
  • wheat flour - 250 gr
  • cheese - 150 gr

To prepare cheese cakes in a frying pan, take kefir, wheat flour, hard or semi-hard cheese, salt, sugar, baking soda and refined vegetable oil for frying.

Pour salt, granulated sugar and baking soda into kefir at room temperature. Mix everything thoroughly.

Grind the cheese on the finest grater.

Add cheese to kefir and mix everything.

Then pour sifted flour - 200 grams. We will leave the remaining 50 grams for rolling.

Quickly knead a soft, slightly sticky dough.

Divide the dough into balls of the same size. I got 5 pieces. It is best to let the dough rest for a little while (about 5 minutes) so that the gluten begins to develop and the dough is easier to roll out.

Sprinkle the table with flour and roll out each piece with a rolling pin into a thin cake, about 4-5 millimeters thick. Shake off excess flour.

Heat the frying pan and grease it with a teaspoon of oil. Fry the flatbread on both sides until golden brown, covered. One flatbread will take about 2-3 minutes. Prepare the rest of the cakes in the same way, greasing the pan with a teaspoon of oil before each one.

In total I got 5 tender cheese cakes. You can brush each one with butter while they are hot, but I didn't.

Cheese cakes with kefir are prepared on the basis of cheese. We suggest you prepare this homemade cakes according to a step-by-step recipe.

  • kefir - 1 glass
  • wheat flour - 500 gr
  • salt - 0.5 tsp.
  • soda - 0.7 tsp.
  • sugar - 1 tsp.
  • cheese - 150 gr

To prepare cheese cakes in a frying pan we will need: kefir, grated hard cheese, wheat flour, table salt, baking soda and granulated sugar.

First of all, you need to pour kefir into the container.

Then add table salt, baking soda and granulated sugar. Mix everything thoroughly.

After this, add finely sifted wheat flour, stir well until smooth.

Tip: For kefir and baking soda to enter into a chemical reaction, you need to wait a few minutes. The reaction of soda with acid will release carbon dioxide, causing the cakes to become fluffy.

At the next stage, add cheese shavings.

Tip: The taste of the dish depends on the type of cheese used. The higher quality the cheese, the juicier the baked goods will be.

Tip: Grate the cheese using a grater with large teeth.

Add a little flour and mix thoroughly, forming a ball of dough.

We share ready dough into about 3 equal parts, roll into a ball, roll out each of them to a thickness of no more than 3-5 mm.

Tip: To prevent the dough from sticking to your hands or board, sprinkle them with wheat flour.

After this, place each flatbread on a frying pan under tightly closed lid at medium fire level. We do not add vegetable oil. As soon as the side is browned, you should turn the cake in the pan to the other side and fry again until lightly browned.

Tip: During the cooking process, cheese cakes made with kefir swell due to the fact that the cheese is heated to the highest possible temperatures.

  • 100 milliliters of kefir,
  • 150 grams of wheat flour premium,
  • 100 grams of hard cheese,

  • a pinch of salt,

In this recipe, I most often use kefir, but in the absence of such, you can also add low-fat 1.5% yogurt.

First of all, you need to sift the flour through a sieve.

After that, grind the cheese on a coarse grater into various bowls, and then the smoked sausage.

Stir until the ingredients are almost completely dissolved.

The next step is to add flour in small portions and knead the dough for at least 4-7 minutes.

We form a ball out of it, which we divide into 3 parts. From each part we roll out a circle 3 millimeters thick, in the center of which we place part of the filling of cheese and smoked sausage.

Take a frying pan and heat it with vegetable oil. Fry the flatbreads on both sides

until light golden brown.

Then add one glass of flour and soda. We don’t extinguish the soda with anything; sour cream will do the job perfectly for us.

Mix all the ingredients first with a spoon. Then we begin to knead the dough with our hands, adding the remaining flour in parts. You may need a little less flour than indicated in the recipe; the dough should be quite dense, but elastic and should be easy to handle.

Divide the finished dough into 4-6 parts, depending on the desired size of the cakes.

We form each part in the shape of a circle; you can do this either with a rolling pin or with your hands. Thickness is approximately 4-5 ml. I didn’t grease the table with anything, the dough came out well and didn’t stick.
