And in order to remove excess liquid from dried fruits, place the ingredient on a kitchen paper towel and set it aside for a while.

Step 4: prepare the orange.


In fact, we need not just an orange, but freshly squeezed orange juice. Therefore, we rinse the ingredient under running water and then put it on a cutting board. Cut the citrus into two halves and then squeeze the juice from the orange slices one by one using a juicer.

Step 5: prepare the apples.


We rinse the apples under running water and then place them on a cutting board. Using a knife, cut the fruit into two halves and cut out the core. If desired, you can remove the skin. After the apple halves are cleared of seeds and peel, cut them into small slices and then chop each one further into small pieces. Place the crushed component in a deep bowl.
Pour sugar and cinnamon into a bowl to taste. Using a tablespoon, mix all ingredients well.
Then put the butter in a frying pan and place the container on less than medium heat. When the butter melts, place the apple slices in the pan and mix everything well with a spoon. After this, pour the raisins into the container and add them there 2 tablespoons freshly squeezed orange juice. Again, mix everything well with the available equipment and simmer the apples for some more time until they become soft. And now turn off the burner and set the container aside so that the apple filling cools slightly.

Step 6: prepare the egg.


Break the eggs with a knife and pour the yolk and white into a deep plate. Using a hand whisk, beat the ingredients until smooth.

Step 7: prepare a quick apple strudel with raisins, almonds and cinnamon.

Actually, when we talk about apple strudel, without any specifications, this is the recipe that is always presented. Viennese strudel, Austrian, classic, traditional – there are many more names for this dessert.


The filling consists of apples, raisins, nuts, cinnamon and streusel (fine crumble, breaded mixture). All this is covered with many layers of thin yeast-free dough (extract).

The finished strudel is decorated with honey or caramel, sprinkled with nuts and powdered sugar. Often served alongside scoops of soft serve ice cream, whipped cream or regular jam.

Ingredients:

  • Sweet apples – 700-800 g.
  • Raisins – 150 g.
  • Almonds – 50 g.
  • Sugar – 130 g.
  • Breadcrumbs – 130 g.
  • Butter – 100 g.
  • Juice of one lemon;
  • Cognac – 3 tbsp. spoons (optional, this is not necessary);
  • Cinnamon – 1 teaspoon;
  • Wheat flour – 300 g.

  • Water – 120 ml.

Cooking step by step

Strudel dough

Pour water into a deep bowl, add 3 raw yolks, salt and 3 tablespoons of olive oil. Whisk until smooth and liquid.


Sift the flour into the liquid ingredients, mix first with a spoon and then with your hands.


You should end up with a soft, non-sticky dough. Lubricate it with olive oil so that it doesn’t dry out while we’re busy filling it.


Filling

Rinse the apples well, then peel them and remove the cores and seeds. I recommend using ripe sweet apples.

Cut it into thin slices like this. You don’t need to make it smaller, otherwise they will turn into puree later. Place the chopped apples in a separate container and pour freshly squeezed lemon juice on top. This is to prevent the apples from browning. If you wish, you can also grate the zest here for more aroma.


Pour the raisins with hot water from the kettle and let it brew for 15-20 minutes. We also add 2-3 tablespoons of cognac or liqueur, whiskey, wine, in general, some kind of aromatic alcohol. The raisins will infuse and become softer. Place it in a colander to get rid of excess moisture.

Chop the nuts. Some use a knife to cut them into pieces, some crush them in a mortar, others use a blender. The main thing is not to make them too small. Place the nuts in a frying pan and fry over medium heat for about 5 minutes.


In general, you can take any nuts: walnuts, hazelnuts, pine nuts and even peanuts.

The nuts were removed and the pan was wiped down. Place a piece of soft butter (50 grams) in it and melt it. Then add breadcrumbs. Fry and stir with a spatula until the crackers absorb the oil and form a porridge-like mass of ruddy color. Rolling out the dough and shaping the strudel

Let's start cooking

Cut the cooled butter into pieces and place in a deep bowl. Add 3 tablespoons of sour cream, powdered sugar and soda.


Gradually add flour, mixing everything thoroughly with your hands. The dough should be dense but not too dry. The consistency is like soft plasticine. Place it in the refrigerator for 20 minutes.
