I love the poppy seed and cherry rolls that we bake for Christmas, and this year I decided to try making a nut roll. Tasty too, try it!

This time I decided to try to pinch the edge figuratively and place the roll on a baking sheet with the seam up, and not down, as usual. As a result, it cracked a little during baking :) But it still turned out beautiful and tasty.

To make the roll brown, 25 minutes after I put it in the oven (about 200-220C), when the wooden stick remained dry when testing, I brushed it with a beaten egg and increased the heat slightly.

Preparation:

The nut filled roll starts with preparing the apples. They are cored. Then grate it on a coarse grater and put it in a frying pan with pre-melted vegetable oil. Then add sugar, raisins and cinnamon. Simmer for ten minutes, stirring constantly. Then finely chop the walnuts with a knife.

Now you can start preparing the dough. To do this, add baking powder to the flour and mix everything well. Then beat the eggs with sugar, adding five tablespoons of boiling water during the process. After that, flour and baking powder are added, the mass is mixed, and then poured onto a baking sheet. It is important to cover it with baking paper first. Bake for fifteen minutes. Remove, sprinkle and top with apple mixture. Wrap the nut roll using the paper it was baked on.

Roll with nut filling

  • one glass of milk;
  • two tablespoons of sugar;
  • ten grams of dry yeast;
  • one egg;
  • a pinch of salt and vanillin;
  • butter - 50 grams.

Yeast dough is kneaded. Here milk, sugar, yeast, egg, salt, vanillin and butter are combined. Then everything is placed in a warm place. When the mass rises for the third time, you can already roll it out. A special paper is taken on which the layer is rolled out. Then the nut filling is laid out on top of it and a roll is made. Moreover, its edges need to be connected. After that, cut the roll in a circle and unfold the resulting parts. Then everything needs to be left for half an hour for the dough to finally rise. Then you can brush with beaten egg and bake for forty minutes.

Nuts, previously chopped with a knife or in a blender, should be fried. Then add butter and powdered sugar to them.

  • butter - 50 grams;
  • a tablespoon of powdered sugar;
  • a glass of milk.

The butter needs to be melted, mixed with milk and powdered sugar. Then cool the mass and then put it in a little bag. Trim the tip so that you can decorate the roll with nut filling with a mesh. The recipe is actually simple, it takes a little time to prepare, but the dish turns out very tasty.

Hungarian roll

Opara. You will need half dry yeast, two tablespoons of sugar and half a glass of kefir.

  • half a glass of milk, kefir and the same amount of sugar;
  • two eggs;
  • three tablespoons of butter;
  • a pinch of salt;
  • flour 700 grams.
  • walnuts - 200 grams;
  • one glass of raisins and the same amount of sugar;
  • butter - 50 grams;
  • 50 ml milk;
  • one egg;
  • two spoons of cocoa and cinnamon;
  • vanillin.

This nut roll is easy to prepare. The recipe is very interesting, and the baked goods themselves are delicious. First you need to put the dough. To do this, yeast and sugar are diluted in warm kefir. The mass is left for twenty minutes. Next, milk and kefir are heated and butter and sugar are added. Mix well until smooth. Sift flour - 300 grams. Salt, milk-kefir mixture, dough and eggs are added to it. Mix gradually, add the remaining flour. After the dough stops sticking, you need to lay it out for kneading. Then put it in a cup, cover and leave for two hours.

Next, the nut filling is made. In a cup you need to put chopped nuts, raisins, cocoa, sugar and cinnamon. Mix by adding heated milk with butter, egg and vanillin. When the dough is ready, you should divide it into two parts, and each of them into three pieces, roll them out thinly, put in the filling and roll them into a roll. Then place in a baking dish, sprinkle with oil, cover with a towel and leave for one hour. Then brush with egg and then bake for another hour.

Roll with condensed milk and nuts

Preparation:

First, take the eggs and separate the yolks from the whites. Beat the first ones with sugar, and the second ones make a fluffy foam. Then we combine both masses. Then flour is gradually added. The liquid dough is poured onto a prepared baking sheet covered with special paper. Distribute everything evenly and bake until golden brown. When it has cooled, remove the paper, soak it in condensed milk, sprinkle with nuts, and wrap it. Then sprinkle powdered sugar on top. The nut roll is ready. You can serve it on the table.

Roll with nuts and lemon cream

  • eggs - 4 pieces;
  • one yolk;
  • hot water - 4 tablespoons;
  • vanilla sugar - one sachet;
  • sugar - 125 grams;
  • starch - 25 grams;
  • flour - 100 grams;
  • baking powder - one teaspoon.
  • gelatin - 10 grams;
  • cream - 400 grams;
  • lemon juice - 100 milligrams;
  • lemon zest;
  • vanilla sugar;
  • half a glass of walnuts.

Preparation:

Use a mixer to beat the eggs, gradually adding hot water. Then add regular and When the mass increases in volume, you can add flour, baking powder, starch. Mix the mixture well and place on a baking sheet covered with special paper. Bake for fifteen minutes at 180 degrees.

While the dough is baking, you need to spread a towel on the table. Sprinkle it with sugar, take out the dough and place it on a towel, with which we wrap the roll.

Next the cream is prepared. To do this, soak the gelatin according to the instructions. Heat the lemon juice and add the gelatin. Then whip the cream with powder, cooled lemon juice and zest. The dough needs to be unrolled, greased with cream, sprinkled with chopped nuts, and rolled again. Then you need to cool it, and the nut roll is ready.

A delicious, tender nut roll is the perfect ending to any dinner party. Moreover, its preparation does not have to be very complicated, long and painstaking. The simplest options are no less tasty. Very easy to prepare roll and very tasty! The only thing you have to spend money on is walnuts, but the amount of filling can be halved. This is a great dessert to go with a cup of tea and a cup of coffee. But in my opinion, it’s best to eat it with warm milk :)

I got 3 rolls of a decent size. But you can roll out the dough thicker, make the rolls shorter, etc. Everything is at your discretion. It’s better to make the filling first and then work on the dough.

I prepared the dough according to my favorite recipe, please ask for a step-by-step recipe and explanations. I’ll leave the recipe here too, but it will be brief.

For the test:

  • 1 tbsp. dry instant yeast
  • 2 tbsp. Sahara
  • 3 tbsp. flour
  • 300 ml warm water or milk
  • 1 tsp salt
  • 1/3 cup vegetable oil
  • 2-2.5 cups flour

For filling:

  • 150 ml milk
  • 500 g shelled walnuts
  • 200 g sugar
  • 80 ml honey
  • zest of half a lemon
  • 1 tsp vanilla sugar or 1/2 tsp. vanilla extract

For lubrication: 1 egg

In a bowl, mix water (or milk), sugar and flour. Dissolve yeast in this mixture. Cover with a clean towel and leave in a warm place for 15 minutes. Add salt and oil. Add flour in parts and knead the dough so that it does not stick to your hands. Leave for another 15 minutes, the dough should increase 1.5-2 times.

For the filling, heat the milk with sugar and honey over low heat. You should not bring it to a boil, you just need the sugar and honey to dissolve.

Chop the nuts. You can use a blender, meat grinder or knife. Without fanaticism, nuts should not turn into flour.

Pour the hot milk mixture into the nuts. Stir well to obtain a homogeneous mass. Cool slightly.

Divide the dough into 3-4 parts (also mentally divide the filling). Roll each into a rectangular layer (if possible) 0.5 cm thick. Place the filling on the dough, smooth it out, not reaching a couple of centimeters to the edges. Fold the short edges over the filling (these will be the ends of the roll)

Roll the roll along the long side.

Place the rolls on a baking sheet, greased or lined with parchment paper, seam side down. Cover them with a towel and leave for 15-20 minutes in a warm place to rise a little. Then prick them lengthwise with a toothpick or a wooden splinter so that they do not crack during baking. Beat the egg in a cup or bowl and brush the rolls with it.

Place the rolls in the oven preheated to 200 degrees for about 20 minutes. They should turn brown, as in the photo. If this happens before the specified time, feel free to take them out so as not to burn. Do the same if the time is up and the rolls have not yet become golden and ruddy, i.e. wait until they acquire a pleasant color.

Remove the finished rolls from the oven, cover with a towel and let cool. And then you can cut and serve.

I offer you, dear readers, a recipe from Victoria - a very tasty yeast roll with nut filling.

You and I have already baked a Christmas roll with poppy seeds, it will turn out great with pitted cherries, jam, and now - with nuts! Try a new recipe and compare which filling you like best! Word to the author...

  • 8-10 servings


    Ingredients for the dough:

    • 0.5 l. milk;
    • 200 gr. margarine;
    • 3 eggs;
    • 1st Art. Sahara;
    • 1 tsp salt (without top);
    • 1 packet of dry yeast (Saf-moment);
    • 1 kg flour;
    • Vanillin on the tip of a knife;
    • 1 coffee spoon of vodka.

    Filling ingredients:

    • Nuts – 200g.

    Cooking method:

    • First, let's prepare the products. Since our dough is yeast, the products must be at room temperature. Take a bowl with high sides (or deep enough, because the dough will rise in it) and sift about 0.7 kg of flour.
    • No matter how fresh the flour is, it must be sifted:
    • firstly, it is saturated with oxygen, which is simply necessary for yeast,
    • secondly, we will clean it of lumps and unnecessary debris
    • Making dry mass. Mix yeast with flour.


    • Add margarine and rub everything thoroughly with a spatula (or your hands).


    • Add sugar and salt and mix again.


    • And now a secret from grandma: dissolve vanillin in a spoon of vodka, fix the aroma.

      If you take homemade eggs, it is better to grind them with our dry mass (the yolks are fatty and small lumps may form).


    • Add milk and knead the dough.


    • Let the dough rise (covered with a towel) and proceed to the filling.
    • We clean the nuts, if you have shelled ones – great! You can dry the nuts in the oven for about ten minutes, and then chop them in a towel using a rolling pin. Or take a mortar and grind it in it.


    • The dough has risen, gently knead and divide into 6 parts. If you don’t have time to bake 6 rolls, put the dough in plastic bags and put it in the refrigerator to finish baking within a week.
    • Roll out the dough into a rectangle.


    • Sprinkle with nuts and roll up.


    • Separately, beat the egg and grease the roll, punch the top layer with a toothpick (3-5 holes so that it is the same width as the rest).


    • Bake in an oven preheated to 200 degrees for 35-40 minutes.


    • Remove from the oven and be sure to let cool. That's my whole recipe!
