  • Rice flour – 1.5 cups;

  • Margarine – 130 grams;
  • Granulated sugar – 100 grams;
  • Milk – 30 ml.

To make rice cookies, we will use rice flour, eggs, margarine, granulated sugar and milk.

In a deep bowl, mix granulated sugar, melted margarine and eggs. Whisk everything together.

The main ingredient of Korean cuisine, like the cuisines of all Asia, is rice. It is used as a main dish in boiled form, ground into flour and made into noodles, added to sauces and made into Korean sweets. There are many recipes for national sweet dishes, but some stand out from the crowd.

Chimpeni

Sweet cakes made from rice flour. Chimpeni is one of the favorite sweets of both kids and their parents. Timpeni (second name) look like small round steamed flatbreads, decorated in the center with a red flower.

There are several recipes for preparing Korean sweets from rice flour.

The method is classic. To prepare chimpeni, you will need to take white rice, rinse it thoroughly and leave it to soak. In the hot season, four hours of soaking will be enough, in the cold season - at least eight. After the required period, drain the water and dry the rice on a towel for an hour. Then the cereal must be ground into flour. As a result, it should turn out a little moist so that the cakes stick together well.

Now you can start preparing the dish. You will need:

    rice flour - 600 g;

    makgeolli - 70 ml;

    salt - 1 pinch;

    sugar - 200 g;

    water - 250 ml.

Mix all ingredients and leave the dough for six hours. After time has passed, form into flat cakes and place in a double boiler for two hours.

The second cooking method involves a different method of preparing rice flour. The rice is soaked in water for two days, then the water is drained and the rice is steamed in a water bath until completely cooked. The prepared cereal is crushed into a homogeneous mass, and flat cakes are formed from it, adding the necessary ingredients.

Yakkva

Cookies based on a traditional recipe with grains, honey, edible flowers and roots are called yakkva. The result is delicious Korean sweets, the photos of which partially confirm this.

This dessert is considered one of the main delicacies in Korean traditional cuisine. Yakkwa is mentioned in the chronicles of the Goryeo Dynasty and served as the main dish of religious holidays.

To prepare you will need:

    ginger - 20 g;

    sugar - 300 g;

    water - 400 ml;

    honey - 300 g;

    flour - 1 kg;

    sesame oil - 30 ml;

    vodka or cooking alcohol - 100 ml;

    pine nuts - 100 g;

    vegetable oil - 200 ml.

When preparing Korean sweets, you need to take ginger root, which is peeled and cut into thin slices. Sugar syrup is prepared from ½ the total volume of sugar and 200 ml of water, prepared ginger is added to it, and the whole mass is boiled for 15 minutes. Cool and set aside.

In a separate bowl, mix a glass of water, 50 g of ready-made sugar syrup, the rest of the sugar, and ginger. Boil everything over medium heat, stirring and skimming off the foam. After thickening, add honey and cook for another couple of minutes.

Add confectionery alcohol, sugar and honey syrup to the sifted flour, mix and knead the dough. Roll it out to a thickness of 5 mm and cut into diamonds measuring three by five centimeters. Sprinkle the cookie dough with chopped pine nuts.

Cook future Korean sweets in a greased frying pan until golden brown.

Ttok

Delicious rice flour cakes filled with sweet beans. To make tteok, you will need one cup of rice flour, half a teaspoon of salt, three and a half cups of sugar, a cup of water, a little more than half of the sweet bean paste and cornstarch.

Mix flour in a bowl, add water and knead into an elastic dough. Cover the bowl with cling film and microwave for 2 minutes. Stir the finished dough for several minutes until smooth. Form the finished bean paste into balls and leave to rest. Form the finished dough into sausages and divide into pieces. Roll out into thin circles, place the filling inside, seal the seams and place on a plate. Tteok is ready to serve to guests and family.

Injeolmi

Cakes from or, as they are called in their homeland, injeolmi, are popular Korean sweets. Recipes with photos at home will help you prepare many desserts yourself, including this one.

So, injolmi turns out soft, sweet, sticky and viscous. You will need rice flour, salt, sugar, toasted soybean powder and crushed wormwood. Mix all ingredients except wormwood. Knead the dough, place in a bowl and microwave for three minutes. Remove, stir and return for one minute. Take the dough out again and knead until bubbles appear and it becomes sticky. Roll out on a board sprinkled with soy powder and cut into pieces. Sprinkle finished Korean sweets with wormwood.

Machjakkwa

To prepare maejakkwa you will need to prepare:

    ginger - 20 g;

    brown sugar - 1 cup;

    water - 1 glass;

    flour - 1 glass;

    sesame oil - 10 g;

    confectionery alcohol - ¼ cup;

    pine or other nuts - a handful;

    vegetable oil - 200 ml;

The ginger root is peeled and grated on a fine grater. Using sugar and water, prepare a syrup by adding ginger while boiling. The finished syrup must be cooled, honey added and stirred thoroughly until a homogeneous consistency is formed. Sift the flour into a bowl, add sesame oil and stir, pour in alcohol, syrup and knead into an elastic dough. If there is not enough liquid, you can add cold water.

The finished dough is rolled out to a thickness of five millimeters, cut into diamonds or any convenient shape. Make a cut in the middle of each piece and turn out one tip of the cookie three times. It looks like bows. Make a deep fryer of oil and fry the cookies until golden brown. Take out the finished products, let the oil drain, dip into the syrup and dry the Korean sweets.

Making Korean-style rice flour pies with meat

1. First you need to knead the dough. To do this, dilute the yeast in half the warm water. In the second half of the water, dilute sugar and salt. Pour the flour into a deep bowl, make a well, pour in the yeast mixture, stirring.

2. Then gradually pour in water with salt and sugar, continuing to stir. Finally, pour in the vegetable oil and knead the flour mixture until a soft, elastic, pliable dough is obtained.

3. Cover the dough in the bowl with a towel and leave at room temperature for about 1 hour. During this time, the dough will increase in volume. Punch it down and leave it to rise for another 20 minutes.

4. Punch down the finally risen dough again, divide into 12 pieces, forming them into balls. Cover the buns with a towel and leave for 20 minutes while you start filling.

5. Thinly chop the cabbage, place in a bowl, add salt and crush with your hands to make it softer. Season with pepper, add minced pork and mix the finished filling thoroughly.

6. From each dough ball that has slightly increased in volume, roll out a flat cake, place the filling in the middle and pinch the edges of the dough, forming an oblong pie. As you have already noticed, you will get 12 of these pies.

7. Grease the steamer grates with vegetable oil and place the pies at some distance from each other, keeping in mind that they will double in volume during cooking.

8. Steam the pies for 30 to 45 minutes, depending on the steamer model. If you are cooking for the first time, you will have to taste after 30 minutes to determine readiness.

9. Serve the finished steamed rice flour pies with Korean meat while still warm, with your favorite sauce and vegetable salad.
