  • 3 eggs;
  • 80 gr. green onions (small bunch);
  • 50 gr. butter;
  • Salt;
  • Pepper;

How to prepare the dough

In this recipe I use mine favorite dough for fried pies. It turns out airy, light, with a crispy crust.
To prepare the dough, measure out 250 ml. warm milk.
Add the same amount (250 ml.) warm water. Mix.

In a separate bowl, check the yeast for freshness.

When working with yeast dough, we simply need the yeast to be of high quality, fresh, to “work” well and to be able to “raise” almost any dough.

To check, pour the yeast into a small bowl, add 0.5 cups of warm water, 1 teaspoon. spoon of sugar. Leave for 5-7 minutes.

If the yeast is working, a foamy head will appear in the bowl.


Now take a large bowl in which the dough will rise. Break one egg, add 1 teaspoon. spoon of salt, mix.
Pour out the yeast and milk.


Add sifted flour and knead the dough.


The dough should be stiff and not stick to your hands. Cover the dough with a damp towel soaked in hot water, and put it in a place without drafts.


For lifting yeast dough it will take 1-1.5 hours.
While the dough for pies with onions and eggs is rising, let's make the filling.

Filling

Finely chop the green onion feathers.

Yeast based butter dough you can prepare delicious ones for tea. Take note of this recipe!




Cool, peel, and cut the eggs into small cubes.


Mix onions and eggs.
Salt and pepper.

Add melted butter.

After removing the yeast dough from the bowl, knead it and keep it on the surface for 20 minutes.


We type in the palm vegetable oil and separate small balls from the dough. Place the balls on a surface greased with vegetable oil (or you can sprinkle with flour).
Leave the balls for 20 minutes.

The dough is ready. There is very little left: preheat the oven at 180 degrees, lightly grease the mold with oil, pour half of the dough into it, carefully lay out the filling and fill with the rest of the mixture. Bake the pie for 30-40 minutes, checking its readiness from time to time. When the top is well browned, you can turn off the oven, and after a quarter of an hour, remove the finished jellied pie with egg and green onions from it.
