Which fish is better: fresh or frozen?

Fresh, of course, is better, but it spoils quickly. If you buy frozen fish and do not defrost it, it will be stored for several months.

The quality of frozen fish largely depends on how it is frozen. Fish is 70% water. The longer it is stored, the more ice will form on it. Eventually, the fish's flesh will begin to deteriorate.

Fish with firm, fatty flesh, such as king salmon, respond better to freezing than fish with lean flesh, such as haddock. Lean fish of the cod family, which includes whiting, cod, haddock and hake, contain trimethylamine oxide, a chemical compound that breaks down the odorous substances dimethylamine and formaldehyde. This means that when this fish is first frozen and then thawed, it begins to emit "fishy" aromas. When thawing, cod fish often still acquire a somewhat spongy and dry texture due to the fact that the proteins contained in the fish's flesh are destroyed during freezing.

The fastest and safe way defrosting any frozen fish is to put it in a plastic bag, which is then immersed in ice water. You can also transfer the fish from the freezer to the refrigerator. It will take longer to defrost in the refrigerator because air will not penetrate into it as quickly as water.

If you are short on time, you can start cooking fish directly from frozen. In this case, an appetizing brown crust forms on its surface. To do this you need to douse the fish. cold water from the tap to remove the ice, pat dry with a paper towel and start cooking. But this can only be done with fairly flat fish species. If the fish is thick, then when cooked from frozen, it may remain raw inside.

What is the best way to cook fish: whole or filleted? With skin or without skin?

It is best to cook fish whole. The fact is that her flesh has little collagen - a protein that gives meat a good taste, but there is a lot of bones and skin. Are wild and farmed fish cooked differently?

Despite the fact that farmers and wild fish look almost the same, wild ones cook faster than farmed ones. The fact is that wild ones swim where they want and eat what they want, so they have more developed bones and flesh. On farms, fish have limited swimming space, so their bones and meat are less developed.

What is the white substance that sometimes appears on the surface of cooked fish?

This is albumin - a muscle protein that, when heated, coagulates, turning into an unpleasant-looking white substance. Albumin is present in all types of meat and fish and always coagulates when the product is cooked. True, its amount can be reduced first by soaking the fish in a mixture of 1 tablespoon of salt per glass of water for 20 minutes. After this procedure, there is no need to salt the fish, otherwise it will turn out over-salted.

What needs to be done to get an appetizing crust on the fish?

The less moisture remains in the fish, the better the crust will turn out. To remove moisture from fish, place it raw on a plate. Do not cover the plate and place it in the refrigerator for an hour.

When you cook the fish, place it on a baking sheet and it on the stove rack. Let the air circulate around the fish and dry it at the same time. Cook the fish at high temperature, this will allow the liquid to evaporate faster. Do not spray fish with lemon juice, wine or other liquids.
