Flatbread with cheese filling a quick fix in 15 minutes, tastes like real Khachapuri! They are baked in a dry frying pan without the use of vegetable oil, and they turn out crispy and tasty. This dish will help you out when guests arrive unexpectedly!

For the test:

  • Sour cream - 200 gr. (10%) can be replaced with full-fat kefir
  • Vegetable oil - 2 tbsp.
  • Salt - 0.5 tsp.
  • Sugar - 0.5 tsp.
  • Soda - 0.5 tsp. quenched with vinegar (or baking powder)
  • Flour - 1.5-2 tbsp.

For filling:

  • Hard cheese - 100 gr.
  • Eggs - 3 pcs.
  • Garlic - 4-5 cloves
  • Mayonnaise - 2-3 tbsp.

Add butter, salt, sugar to sour cream and mix.

We extinguish the soda with vinegar and add it to the sour cream mixture and mix again.

If we cook with kefir, then we do not extinguish the soda.

Sift 1 cup of flour and mix with a spoon. Then add more flour and knead with your hands. The dough should be soft and not clogged.

Cover with film and leave to brew. Meanwhile, prepare the filling. Grate the cheese on a medium grater. Add three eggs, squeeze out the garlic and add mayonnaise - 2 tbsp. with a slide and mix well.

Place the dough on a floured table and divide it into 4 parts. Roll out thin flat cakes. The thinner you roll, the tastier and crispier the dough will be.

Place the filling on top and distribute evenly.

Fold the edges on both sides towards the center and pinch.

We gather from the other two ends to the center and twist the seam.

Press lightly with your hands, sprinkle with flour and turn over. Roll out with a rolling pin.

Place in a hot dry frying pan and fry on both sides.

The whole process, including kneading the dough, takes only 15-20 minutes.

Very tasty and quick to prepare potato cakes with a cheese center and herbs! Be sure to try it, you can use the mashed potatoes left over from yesterday.

Ingredients:

  • Mashed potatoes - 500 gr.
  • Flour - 30 gr. (can be whole grain)
  • Egg - 1 pc.
  • Garlic - 1 clove
  • Turmeric - 1/2 tsp.
  • Cheese - 150 g.
  • Greens, salt, pepper
  • Breadcrumbs or flour
  • Vegetable oil - 3 tbsp.

Boil the potatoes in salted water until tender, drain the water and mash into a puree.

If you have ready-made puree it will be even faster.

Add flour, egg, herbs, salt, pepper, turmeric, finely chopped garlic to the mashed potatoes and mix until smooth.

Cut the cheese into 1x1 cm cubes.

From mashed potatoes We form a sausage and divide it into 12 layers - flat cakes.

Take 1 layer, place 3-4 pieces of cheese on it and cover with a second layer on top.

We secure the edges, roll in flour or breadcrumbs and form into flat cakes.

They don’t need an oven, because the flatbreads with cheese are baked in a frying pan. The recipe with photo is very simple. Judge for yourself. The dough can be kneaded using any fermented milk product that is available, and it is guaranteed to turn out successful, even if this is the first time you have picked up a rolling pin. We also select the filling at our discretion: any type of cheese + herbs to taste - simple, but incredibly tasty and aromatic. The flatbreads turn out simply wonderful! Soft, fluffy, with a deliciously crispy crust and a delicately chewy filling. It's impossible to resist!

Dough ingredients:

  • kefir (sour milk, yogurt) – 250 ml,
  • egg – 1 pc.,
  • vegetable oil – 30 ml,
  • sugar – 1 tsp,
  • salt – 0.5 tsp,
  • soda – 0.5 tsp. or 1 tsp. baking powder,
  • flour – 400-450 g.
  • For filling:
  • cheese (any kind, I have suluguni) – 350 g,
  • greens – 50 g,
  • salt - to taste.
  • + butter – a piece for greasing the finished flatbreads.

How to cook flatbreads with cheese in a frying pan

Warm the kefir to approximately room temperature (I put it directly from the refrigerator in a micro for 10-12 seconds). Pour the kefir into a bowl and beat in the egg. The fat content of kefir does not matter; this dough always turns out successful - soft, fluffy, pleasant to work with. Dough mixed with yogurt or sour milk turns out no worse.

Salt everything, add sugar. Pour in the vegetable oil and whisk the mixture until smooth.

Now add soda to the dough. Mix the mixture again with a whisk, watching it bubble. If you decide to use baking powder instead of soda, then skip this step and add the baking powder, sifting it into a bowl along with the flour.


Gradually sift the flour into the dough, mixing it in first with a whisk, and then transferring it to the work surface and bringing it to the desired state.

The dough is easy to knead and comes out very soft and pliable. It doesn't stick to your hands. When using kefir with 2.5% fat content, I needed 400 g of flour for kneading. If you knead the dough with sour milk or yogurt, you will need more flour. Lightly dust the formed dough ball with flour and hide it under film for 20 minutes.

This time can be spent preparing the filling. Grate the cheese on a coarse grater. The choice of cheese is also at your discretion. I often take suluguni, sometimes I dilute it with cottage cheese or semi-solid “Russian/Dutch”.


Rinse the greens, dry them, chop them finely and add them to the grated cheese. Stir the filling, taste it and, if necessary, add more salt to taste. Ready.

We slightly knead the rested dough (it has become even softer and more pleasant), divide it into small koloboks - we determine the size depending on the desired thickness of the flatbreads and the diameter of the frying pan. I got 7 koloboks.

Roll out the bun into a flat cake about 3 mm thick. Place the filling in the middle - a ball, approximately the same size as the dough ball.


We hide the cheese filling in the dough, gathering the edges of the flatbread in the center above the filling.


Gently press the flatbread with your hands - this will make it easier to roll it out. If the dough is a little sticky, sprinkle the work surface with flour. But, again, only a little, otherwise the flour will burn when frying.


And roll them out to the required size, keeping in mind that they will still rise during frying. I made the cakes quite thin - 4-5 mm.


The cakes form quickly, so you can set the pan to warm up as soon as you start modeling. Place the formed flatbread seam side down and fry in a frying pan without oil at closed lid. When flipped brown side up, the tortilla may swell. In this case, you can carefully pierce it to release the air.


Grease the finished flatbreads with butter.


And serve right away - hot, when the cheese in the filling is still stretchy, they are especially tasty.

Ingredients:

  • ham – 200 g;

  • sugar – 20 g;
  • Sunflower oil – 50 g;
  • soda – ½ tsp;
  • salt – 10 g.

Cooking method:

  1. Mix kefir with soda in a deep bowl and leave for 15 minutes.
  2. Add sugar and salt, stir until the crystals dissolve.
  3. Add 200 grams of flour and mix until smooth.
  4. Grate the ham and cheese using a coarse grater.
  5. Place into the dough and mix again.
  6. Add the remaining flour. Stir until the mixture thickens.

  8. After 20 minutes, take out the ball and divide it into 4 lumps.

  10. Place a quarter of the grated ham in the middle of the layer, pinch the edges tightly.
  11. Carefully roll out the layer with a rolling pin and prick the dough with a fork.
  12. Place the pieces in a heated, oiled frying pan, seam side down.
  13. Fry the cheese cakes over medium heat until crust forms on both sides, with the lid on.

Flatbread with cheese on kefir

  • Time: 40 minutes.
  • Number of servings: 4 persons.

Quick flatbreads with cheese in a frying pan can be prepared with the addition of herbs and chicken meat. This option is perfect for a picnic or snack. The main thing is not to overcook.

Ingredients:

  • boiled breast – 200 g;
  • flour – 400 g;
  • soda, salt, sugar - 0.5 tsp each;
  • kefir – 200 ml;
  • suluguni – 200 g;
  • dill, parsley - to taste.

Cooking method:

  • soda – 1.5 tsp;

  1. Grind the cheese, combine with beaten eggs and spices.
  2. Add soda and salt to the fermented milk product. Add flour in portions.
  3. Let the mixture sit for half an hour.
  4. Divide the dough into equal parts and roll each one out.

Three on a coarse grater in a deep bowl. I used durum varieties, but it will also work sausage cheese, and regular processed cheese like “Druzhba”. We only take into account that the taste and aroma of the flatbread will depend on the cheese you choose.

Add sour cream, chopped herbs, salt and one egg. IN original recipe they say that sour cream can be easily replaced with mayonnaise, but I like the first option better.


Then add one glass of flour and soda. We don’t extinguish the soda with anything; sour cream will do the job perfectly for us.


Mix all the ingredients first with a spoon. Then we begin to knead the dough with our hands, adding the remaining flour in parts. You may need a little less flour than indicated in the recipe; the dough should be quite dense, but elastic and should be easy to handle.


Divide the finished dough into 4-6 parts, depending on the desired size of the cakes.


We form each part in the shape of a circle; you can do this either with a rolling pin or with your hands. Thickness is approximately 4-5 ml. I didn’t grease the table with anything, the dough came out well and didn’t stick.


Place each rolled out flatbread on a hot frying pan and fry in enough oil on both sides over medium heat until golden brown.


We stack the finished flatbreads with cheese and invite everyone to the table.
